It has been another while since my last baking recipe on this blog, but it’s finally back! Today, I’m sharing a recent one for you that is not only really tasty, but also super easy to make!
I’m talking about none other than chocolate chip oat banana bread, which pairs banana with chocolate chips together in a lovely, sweet medley of dessert perfection! I actually got this recipe from my mom, who in turn was inspired to make the prototype of it (in cupcake form) before I did. Either way, I decided to get back into baking, and this recipe was a good one to ease into!

Without further ado, here’s the recipe! 😀
Chocolate Chip Oat Banana Bread (makes one loaf or about 17 cupcakes)
1 1/2 cups flour
1 cup oats
1/2 cup white or brown sugar (doesn’t matter, really. Brown sugar will make it chewier)
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 egg
3/4 cup milk
1/3 cup oil
1 tsp vanilla
1 cup banana (or three, ripe bananas), mashed up.
…and as much chocolate chips as you want!
Using a whisk, mix together the dry ingredients first (flour, sugar, salt, baking powder, baking soda, and oats) in a large bowl and set aside.
Next, combine the wet ingredients together in a smaller bowl. Mix the egg, milk, oil, vanilla, and mashed bananas until smooth.
Pour the wet ingredients into the dry ingredients and use a spatula to gently fold the mixture in. Add in the chocolate chips and continue folding until just combined. Be careful not to overmix.
Preheat the oven to 400°F. Line a loaf pan or cupcake tray with parchment paper or cupcake liners, respectively and pour the batter in. Make sure you get everything out of the bowl!
Bake for 40 minutes (for loaf) or 20 minutes (for cupcakes). You’ll know when it’s done when you insert a toothpick into the center and it comes out clean. Let it cool for a bit before digging in!
…personally, I like to have my slice of chocolate chip-banana bread with either a glass of milk or a cup of tea, just to make sure that it goes down well! You’ll like it so much that you’ll have a hard time stopping yourself from getting another! 😛
